Ingredients

  • 8 scoops Herbalife® Protein Drink Mix Vanilla (DIVIDED) 
  • 6 scoops Herbalife® SKIN Collagen Beauty Booster 
  • 50 g (1/2 cup) rolled oats 
  • 55 g (1/2 cup) almond flour or almond meal 
  • 1 tsp. baking powder 
  • 1 medium banana 
  • 5 eggs 
  • 125 ml (4 oz.) lemon juice 
  • Zest of one lemon 
  • 3 TBSP plain nonfat Greek-style yogurt

Instructions

  1. Preheat your oven to 177 degrees Celsius (350 degrees Fahrenheit). Spray a 20x20-centimeter (8x8-inch) baking dish with pan spray. 
  2. For the crust: Whirl the oats in a blender or food processor until they’re finely ground. Add the almond flour, 4 scoops of Protein Drink Mix, baking powder and banana and pulse in the food processor until the mixture is crumbly and starts to hold together. Transfer the mixture to the prepared baking dish and press the mixture with damp hands or the back of a fork into an even layer. Bake it for 10 minutes. 
  3. While the crust is baking, prepare the filling: In a medium bowl or blender, whisk together the eggs, lemon juice, lemon zest, Collagen Beauty Booster, the remaining 4 scoops of Protein Drink Mix and yogurt until smooth. When the crust has baked for 10 minutes, pour the filling mixture over the crust, return the pan to the oven and bake for an additional 20 to 22 minutes until the filling is just set and starting to brown around the edges. 
  4. Remove the pan from the oven and let it cool on a wire rack for 30 minutes, then transfer it to the refrigerator to cool completely. 
  5. Cut in 9 bars. Dust with powdered sugar, if desired.
